Among Wuhan’s countless traditional street foods, three-delicacy bean skin (三鲜豆皮, sanxian doupi) stands out as a timeless local treasure. With a golden, delicate appearance and an incredibly rich, inviting aroma, this humble-looking snack boasts extraordinary historical heritage and enduring popularity. Long beloved by locals as a staple breakfast treat, it has also won high recognition and sincere praise for its authentic Hubei flavor.
The fame of three-delicacy bean skin is closely tied to Laotongcheng Restaurant (老通城饭店), a time-honored Wuhan eatery founded in 1931 at the intersection of Zhongshan Avenue and Dazhi Road in Hankou. Renowned as the “King of Bean Skin”, Laotongcheng has specialized in crafting premium bean skin for over nine decades and is widely regarded as the birthplace of the classic Wuhan-style three-delicacy bean skin. A trip to Wuhan is never truly complete without tasting its signature bean skin, which embodies the authentic essence of Hankou cuisine.
This iconic snack gained nationwide fame after receiving high praise from Chairman Mao Zedong. In 1958, during his inspection tours of Wuhan, Chairman Mao visited Laotongcheng Restaurant twice specially to taste its three-delicacy bean skin. Deeply impressed by its unique flavor, he praised it warmly: “Bean skin is a distinctive Hubei flavor that should be well-preserved. You have created a famous local snack for Hubei, and the people are grateful to you.” In fact, Chairman Mao enjoyed this delicacy on four separate occasions, speaking highly of its taste every time.
Far from resting on its historic reputation, Laotongcheng’s three-delicacy bean skin has kept evolving while inheriting traditional craftsmanship. On the basis of retaining its original authentic flavor, the restaurant has developed a diverse range of innovative flavors, including beef, eight-treasure, diced chicken, mushroom and bamboo shoot, and seafood varieties. Each flavor features carefully prepared fillings and exquisite pan-frying techniques.
Crafted with refined skills, the classic three-delicacy bean skin features a smooth, thin batter crust and perfect frying heat control. The ingredients and seasonings are precisely balanced, delivering a wonderful layered texture: crispy on the outside, soft and tender on the inside, with juicy, fragrant fillings and a rich taste that is savory yet never greasy. Loved by people of all ages, this classic snack remains one of the most representative and popular traditional delicacies of Wuhan, carrying the city’s unique food culture and warm daily memories.
